Mexican wedding cakes


La cosa più divertente di questa ricetta è sicuramente il nome. C'è chi li chiama Mexican wedding cakes, chi Russian tea cakes: una differenza di ben 7068 km. Di certo sappiamo che sono dolcetti tipicamente natalizi e che sono le noci l'ingrediente che li rende così speciali.

The funniest thing about this recipe is most definitely its name. Some people call it Mexican wedding cakes, while others use Russian tea cakes: the difference lies in the 7068 km distance. What we know for sure is that they're typical Christmas sweets and that walnuts make them so special.

Ingredienti (per circa 30 biscottini) / Ingredients (they make about 30 biscuits)

  • 110 gr di burro / 110 gr butter

  • 30 g di zucchero a velo / 30 g icing sugar

  • 60 gr di noci tritate finemente / 60 g finely chopped walnuts

  • 125 gr di farina /125 g flour

  • 1 pizzico di sale /1 pinch of salt

  • ½ baccello di vaniglia / ½ vanilla bean


+ zucchero a velo per finitura / + icing sugar for finishing


Procedimento/Procedure:

Incidiamo la vaniglia in senso longitudinale e con la punta del coltello estraiamo i semini. In una terrina sbattiamo il burro insieme allo zucchero e ai semini di vaniglia fino a ottenere una crema. Aggiungiamo le noci ridotte in farina, la farina 00 e il pizzico di sale. Amalgamiamo fino a formare una palla e mettiamo in frigo per due ore.

Split the vanilla bean in half lengthwise and scrape the seeds using a knife. In a bowl, cream the butter with the sugar and the vanilla seeds. Add the grinded walnuts, flour and pinch of salt. Shape the dough in a ball and put in the fridge.


Riprendiamo l'impasto e formiamo tante palline della grandezza di una nocciola (circa 6 grammi di peso). Rimettiamo in frigo per un'oretta o in freezer per dieci minuti. Questo passaggio - insieme al forno ben caldo - serve perché le palline non siano troppo morbide e non si appiattiscano in forno.

After two hours, take the dough from the fridge and make some small balls as big as a hazelnut (the weigh should be about 6 grams). Put back in the fridge for one hour or in the freezer for ten minutes. This step - and a well heated oven - are necessary, this way the balls are not too soft and don't flat once in the oven.

Preriscaldiamo il forno a 180 gradi. Disponiamo le palline sulla teglia distanziate tra di loro e inforniamo per 10/12 minuti. Non di più! Non devono dorare!

Preheat the oven at 180° C. Put the balls on a tray and bake for no more than 10/12 minutes. They don't have to be golden-brown!

Lasciamo intiepidire. Quando saranno tiepide, passiamo le palline nello zucchero a velo. Ripetiamo l'operazione una volta che saranno fredde.

Leave to cold. Once lukewarm, dip the balls in the icing sugar. Repeat again once they're cold.

Attenzione: si sciolgono in bocca e creano dipendenza.

Attention: they melt in your mouth and can be addictive.
